Ok so this cake wasn't actually for the 4th of July (I made it for my dad on Father's Day) but it looks like it belongs at a 4th of July party, right? I have been making this berry cake since the summer going into 8th grade when I started my own homemade/from scratch "cake business" called Liza Cakes. Out of all the cakes I made, this one was definitely a favorite among many. It is the perfect summer cake because it is so fresh and light and pretty! The actual cake itself is just a simple yellow cake, and then I use whipped cream instead of frosting because it's lighter (and healthier? eh...no). You can use whatever fruit you want but I think that strawberries, blackberries, raspberries and blueberries go really well together. Although this two later cake is delicious, the cake itself is kind of overwhelming, which is why cut more layers. Anyway, with the last days of summer quickly approaching I recommend you try this yummy cake!!
